SUMMARY
To oversee and direct a banquet set-up crew of up to five employees in the setting, cleaning and maintenance of all meeting spaces. Is responsible for the cleaning and general up-keep of the back of the house kitchen and storage areas. Organizes storage spaces, orders and inventories supplies, oversees general care and maintenance of buildings and catering equipment. Works as part of a team to ensure the proper set-up, service and billing of all group functions.

Duties:

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned.
Oversees set-up staff, ensuring that meeting spaces are clean and organized.
Set-up manager is responsible for daily timekeeping, scheduling, reviews and hiring of all set-up staff.
Creates cleaning schedules and is responsible for the major cleaning of all back of the house banquet areas and storage areas.
Coordinates cleaning with housekeeping staff to ensure buildings are clean and organized.
Oversees the proper storage and care of all china/glass/silver and catering supplies.
Responsible for all china/glass/silver, service supplies, linens and other items as requested by the client.
Ensures proper storage and care of all supplies.
Inventories supplies, orders supplies and codes invoices.
Oversees the delivery and return of all rental items request from the client.
Leadership responsibilities, in addition to supervising set-up staff, will include supervising and working with service staff and catering captains.

DRESS CODE

Sundance recognizes the impact that our image has on the guest’s impression of the resort and the perception of our ability to provide professional service to our clientele. In order to best promote a positive, professional image that meets Sundance guest’s expectations, employees are required to dress in a professional, conservative fashion that is appropriate for their area. Please use the following as a minimum standard:

All aspects of the Personal Appearance policy (SPL#50) must be in compliance.
Operational managers are required to wear nametags at all times while on duty.
Clothing must be unwrinkled and clean, and in good condition (no rips, tears, or frays regardless of whether accidental or fashionably placed).
Blue jeans are permitted.
Men’s shirts must be tucked in.
Appropriate skirt length is from the knee to the ankle.
A tailored fit is required of all clothing.
Tank tops, halter tops, tube tops, and spaghetti straps are prohibited.
Sleeveless shirts are permitted for females.
Bare midriffs are prohibited.
Proper footwear for your department is required.
Dress sandals are permitted for females.
Flip flops are prohibited in all areas.
Tennis shoes are prohibited unless there is a business need (ie: Mtn. Ops.)
If your department allows t-shirts, they must be in good condition and have appropriate Sundance logos.
If your department allows baseball caps, they must be in good condition and have appropriate Sundance logos.
Failure to comply with the dress code policy or enforce dress code and personal appearance with their staff, may result in disciplinary action up to and including termination.

Qualifications:

SUPERVISORY RESPONSIBILITIES
Directly supervises 1 to 4 employees of the Banquet Housepersons. Carries out supervisory responsibilities in accordance with the organization's policies and applicable laws. Responsibilities include interviewing, hiring, and training employees, planning, assigning, and directing work appraising performance, rewarding and disciplining employees, addressing complaints and resolving problems.
Complete all applicable paperwork for the above responsibilities and submit to HR in a timely manner.

EDUCATION and/or EXPERIENCE
High school diploma or general education degree (GED); prior F&B experience and/or previous event management experience required.
Previous supervisory experience desired.
Prior banquet/venue/restaurant experience desired.

TECHNICAL/COMPUTER SKILLS
Basic computer skills sufficient for invoicing, timekeeping, e-mailing, basic word processing.
Familiar with GroupWise, Word Perfect, Quattro Pro, and Basic Computer Functions and Programs desired.

CERTIFICATES, LICENSES, REGISTRATIONS
Must have or obtain a current food handlers permit within 30 days of employment.
Must have or obtain a current alcohol service permit within 30 days of employment.
Must possess a valid U.S. Drivers’ License in good standing as determined by Sundance’s Insurance Company guidelines.

LANGUAGE SKILLS
Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals. Ability to write routine reports and correspondence. Ability to speak effectively before groups of customers or employees of organization.

MATHEMATICAL SKILLS
Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions and decimals. Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.

REASONING ABILITY
Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists. Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
